Mom's Gravy

This is one of my families favorite allergy friendly comfort foods. Sausage gravy! If you can’t tolerate sausage, dairy, flour, or any of the other ingredients that come to mind when you think about breakfast gravy, go read the blog post for tips on how to make this recipe safe for your family!

Ingredients
  

  • 1 lb Ground Sausage
  • 3 tbs Arrowhead Mills Organic Oat Flour Pancake & Waffle Mix
  • 3 cups Coconut Milk
  • 2 tsp salt different flours, fats, and proteins will require more or less seasoning, taste as you go
  • pepper to taste
  • other seasoning options include, sage, crushed rosemary, garlic, use whatever seasonings are safe and familiar to your family

Instructions
 

  • Brown or heat up your protein or fat
  • Slightly separate the fat from your protein and add your flour to brown in the fat. You will use equal parts fat to flour on this. You can totally eyeball it and definitely don't need to try and measure out how much fat your protein made. I tend to go slightly heavier on the flour to ensure everything thickens up nicely. This is kind of similar to making a roux but ... easier. The main thing is to just get the flour mixed/melted into the fat and then disperse throughout the rest of your pan.
  • Add your milk. I eyeball this too, for every 1-ish Tablespoons of flour used, allow for 1 cup of milk. Heat, Stir, be patient! Certain milks will thicken up more than others. Coconut milk for instance stays pretty thin, almond milk tends to thicken up more. If your consistency gets too thick as it heats up, add more milk.
  • Season! I typically only use sea salt and pepper for my families safe version of this recipe. We have added crushed Rosemary, Sage, and Garlic before when using a protein that needed a little more flavor. Taste as you go, some flours take on a sweeter flavor and need more seasonings to balance that sweetness out!
  • Taste and serve! Serve this over any safe carb of your choosing! We use a safe bread which for my family is Udi's soft white, or a dinner roll from Sensitive Sweets bakery (they have many items that ship frozen!) Before we had a safe bread option, we served this over rice, or with Siete Brand Cassava Tortilla's.
