Taco Tuesday – Classic

I recently posted on my instagram a story about how a close friend of mine reminds me that it’s Taco Tuesday every Tuesday of the week. When first starting our new food journey I would have never imagined that our family could participate in a fun tradition like that. I have spent the last 3 years trying to figure out how to change old favorites into safe and delicious new favorites! Here is our favorite take on the CLASSIC Taco!

Classic Taco Tuesday

Flavor filled AIP friendly or easily adaptable taco night!

Ingredients
  

  • 1 pound grass fed organic ground beef We prefer butcher box for safe meat
  • 1 package Siete Cassava tortillas smaller size works better than burrito size
  • 1/2-1 tsp garlic powder
  • 1/2-1 tsp onion powder
  • 1/2-1 tsp sea salt
  • 1/2-1 tsp ground black pepper
  • 2 tbsp avocado oil
  • 1/2 organic lime juice
  • 1/2 onion I use white
  • 1/2 cabbage cut into strips
  • Cocojune pure coconut milk yogurt plain dollop on top as sour cream replacement

Instructions
 

  • Start by browning your grass fed ground beef, drain fat if desired
  • add in all of your seasonings and saute until mixture thickens up a bit
  • add in your avocado oil, and stir it in until well incorporated (similar to how some people would add water to taco seasoning mix)
  • squeeze in the juice of half organic lime, reserve other half for squeezing over top of built taco
  • remove beef from pan and add in sliced onions, season with salt and pepper if desired, cook to your preferred texture, we like ours to keep a little crunch!
  • slice cabbage into strips
  • sprinkle water onto both sides of cassava tortilla and microwave for 10-15 seconds
  • build your taco with your cooked and seasoned ground beef, sliced raw cabbage (saute if you cant digest raw veggies well), lightly cooked onions, and top with cocojune plain coconut yogurt and an extra squeeze of lime on top!
