Where are my Mom’s at? I see you packing those lunchboxes everyday, and I am right there with you! I am on year number 14 of lunchbox packing and while it is stressful with the added layer of allergy friendly eating, I know it will be sad when its over!
These days there are many options for gluten free pasta! Choose whichever your family can eat and prefer! Over here, we are limited to either Cassava or Rice pasta, the Jovial brand is easy for me to find in my stores so that is what we use! I’ve noticed that this pasta can be made ahead of time but really needs to be heated back up before serving or the noodles get a little firm. For lunch boxes I send this warmed up in a preheated thermos.
Lunchbox Pasta
Ingredients
- 1 box Jovial cassava elbow pasta for lunch boxes I use elbow macaroni pasta because its smaller shape tends to fit better into our thermoses
- 1 pack Chicken tenderloins Use chicken breast, ground chicken, salmon, turkey, or whatever protein your family can tolerate
- 1/4 cup Olive oil
- 1-2 tsp seasoning blend I use a mixture of salt, pepper, garlic powder, onion, powder and oregano
Instructions
- Preheat your convection oven to 350. For the chicken I lightly season with salt and pepper on both sides and bake for 18-20 minutes
- While your chicken is in the oven cook your pasta according to package directions
- Mix up your sauce! The pasta and chicken are a blank canvas, and there are so many ways your can change the flavor of this dish depending on what herbs you choose. I typically just add salt, pepper, garlic powder, onion powder or granules, and a little bit of oregano directly to my room temp olive oil!
- Chop up your chicken and add to your pasta, pour on your oil and mix to combine!
- Don't forget to pack a fork and sides!
