Today we are diving into one of my families favorite comfort foods. Sausage gravy! If you can’t tolerate sausage, dairy, flour, or any of the other ingredients that come to mind when you think about breakfast gravy, stay with me. We will discuss various substitutes along the way, and you can always reach me at pureaip (add link to Instagram) if you have any questions!
The original recipe for this southern breakfast staple is kind of engrained in my families DNA at this point! I’m not sure how many Mom’s back it started with, but in my memory it came from my Grandma and was passed down to my Mom, which then made its way to me! I can’t wait until my daughters are serving it up to their families someday!
Ingredient list to Kerry’s family safe version.
Unseasoned pork sausage
Arrowhead mills oat flour pancake and waffle mix
Coconut milk (not canned)
Salt and Pepper to taste (amount of salt and pepper depends on type of flour used
Substitute recommendations:
Chopped bacon (you will not want pre-cooked for this recipe)
Ground chicken/turkey
Safe fat of your choice (ex: beef tallow, coconut oil, butter if you can tolerate dairy)
AiPeazy waffle and pancake mix
safe flour of choice
You might be wondering why I use pancake mixes for this recipe (and most recipes). If you can tolerate regular flour, cows milk, etc., use it! Substitutions are here to help not make life more complicated. My family cannot use regular flour, and only recently have we been able to branch out to gluten free oat flour. I have found that when using alternative flours that I have the best luck with pre-made mixes. I would prefer to make my own mix. It has just not worked out as well for me as. These pancake and waffle mixes do not have sugar added or anything that will alter the flavor, I have mostly noticed the texture is much more fine than what I get when buying individual flours and mixing myself. Do what works for you!
Mom’s Gravy
Ingredients
- 1 lb Ground Sausage
- 3 tbs Arrowhead Mills Organic Oat Flour Pancake & Waffle Mix
- 3 cups Coconut Milk
- 2 tsp salt different flours, fats, and proteins will require more or less seasoning, taste as you go
- pepper to taste
- other seasoning options include, sage, crushed rosemary, garlic, use whatever seasonings are safe and familiar to your family
Instructions
- Brown or heat up your protein or fat
- Slightly separate the fat from your protein and add your flour to brown in the fat. You will use equal parts fat to flour on this. You can totally eyeball it and definitely don't need to try and measure out how much fat your protein made. I tend to go slightly heavier on the flour to ensure everything thickens up nicely. This is kind of similar to making a roux but … easier. The main thing is to just get the flour mixed/melted into the fat and then disperse throughout the rest of your pan.
- Add your milk. I eyeball this too, for every 1-ish Tablespoons of flour used, allow for 1 cup of milk. Heat, Stir, be patient! Certain milks will thicken up more than others. Coconut milk for instance stays pretty thin, almond milk tends to thicken up more. If your consistency gets too thick as it heats up, add more milk.
- Season! I typically only use sea salt and pepper for my families safe version of this recipe. We have added crushed Rosemary, Sage, and Garlic before when using a protein that needed a little more flavor. Taste as you go, some flours take on a sweeter flavor and need more seasonings to balance that sweetness out!
- Taste and serve! Serve this over any safe carb of your choosing! We use a safe bread which for my family is Udi's soft white, or a dinner roll from Sensitive Sweets bakery (they have many items that ship frozen!) Before we had a safe bread option, we served this over rice, or with Siete Brand Cassava Tortilla's.
Please reach out via PureAIP on instagram if you need help with this recipe! Don’t be afraid to think outside of the box to make comfort foods work for you or your family! When we were at the point that our diet was the most restricted my family LIT UP when I found ways to make some of their favorites even in more unconventional ways, like gravy over rice! Food is medicine, both nutritionally, and emotionally! I hope you enjoy Mom’s Gravy!
